Coconut Cupcakes

The cupcakes I made specially for Eid Ul Azha :). It was my first cupcake frosting trial though it wasn't very perfect,but it was good enough.






INGREDIENTS:
  • 1/4 cup margarine
  • 3/4 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon white vinegar
  • 1/4 cup apple sauce (for the recipe follow the link here)
  • 3/4 cup coconut milk
  • 1 and 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/2 cup coconut flakes

PROCEDURE:
  • Cream together margarine and sugar with a beater.
  • Add vanilla extract, vinegar apple sauce and coconut milk and beat all the ingredients well.
  • Take the flour in a separate bowl and add into it salt, baking powder and the coconut flakes.Whisk all the dry ingredients well.
  • Now add the wet ingredients to the dry and mix them well. Don't overmix it.
  • Bake at 350 F for 20-25 minutes. Makes about 12.

FROSTING:
  • 1/2 cup unsalted butter
  • 1 and 3/4 cup powdered sugar
  • 2 tablespoon coconut milk 
Beat the butter and add slowly the sugar to it. keep beating the butter and sugar till creamy and frothy. Mix into it the coconut milk

Frost the cupcakes with the icing when they have cooled down at room temperature. Sprinkle colored coconut flakes on the icing :) 

Serve with tea or coffee :). enjoy :)

7.  My favorite way to spend a chilly fall day is by    sitting down in the blanket and read some book or watch a movie .

Fill in the Blanks Friday, 4th November 2011





1.   My favorite thing about this week was/is   Eid preparation and muffin recipes :).

2.   Colder weather makes me   cold and happy as winters is my favorite season  .

3.  Three things that make me terribly happy as of late are    my new job appointment,my baking projects :D and my PHD one day INSHAALLAH .

4. If I could only wear one kind of shoe for the rest of my life, I'd choose   flats because they are so very comfortable  .

5.  My personality type is   according to people introvert, silent and expression less! I don't think so it is this way :D I'm sensitive, fun loving, out spoken and friendly.

6.  I have a serious problem resisting    Junk food these days :P

7.  My favorite color to wear is   black and pink!

1.   Something popular that I can't stand/just don't "get" is    trying to be fake to gain "points" :P hate it like anything.

2.   Something unpopular that I secretly love is  roaming around the roads late at night:D   .

3.  When I've had a bad day I   take out the anger accumulating in me or cry for a while.

4. I'd prefer   texting(SMS)  to    calling   any day :D

5.  Something that makes me nervous is    giving presentations in front of the class:S (oh! yes i suffer stage fright):P

6.  Something worth fighting for is     living a positive life. (People would always show you a dark and worse side)

7.  When people think of me, I hope they think    I'm shy and dull and stubborn. Let them think what they can,I don't care :D

Vanilla Cupcakes

The very simple baking experiment with good and yummy results:) 




So this is my shopping for the recipe:P the paper cups, flour, vanilla essence, baking powder and the muffin baking tray:D (Super Victoria store) :P :D


Ingredients:

  • 2 eggs
  • 125 gm butter
  • 2cups plain flour
  • 1 cup castor sugar
  • 1/2 cup milk
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon salt
Procedure:
  • Before starting with the ingredients switch on your oven at 170 C to let it be preheated.
  • Beat the eggs, butter by an electric beater ( use a blender if you don't have one) till creamy and frothy. Add into it the castor sugar and salt and mix it well.
  • Now pour your mixture into a large bowl and sift into it 2 cups of flour in small batches and whisk it with a wooden spatula.

  • Add 2 teaspoons of baking powder and mix it well.
  • Add 1/2 cup of milk and mix the batter till creamy and smooth.
  • Add 1 teaspoon of vanilla essence to the mixture.
  • Take a tablespoon and fill 3/4th of the paper cups. avoid overfilling of the cups.

  • Place your muffin tray with the filled paper cups into the preheated oven and bake it for 30-35 minutes.
(Don't mind the nasty price tag :P)

(if you don't have muffin baking tray, bake them directly on your oven tray)

  • The best way to check whether your cup cakes are baked properly or not, is just poke the center of the cake with a tooth pick. If it comes out smooth without any crumbs it is perfectly baked. but yes don't forget to cook till it develops golden color.
  • Makes about 35 mini cup cakes.
 (many of the cup cakes were eaten as it came out of the oven :P so these don't count to be 35 :D )
  • Serve with and enjoy with tea or coffee :)

Black Eyed Peas Chaat :P







Ingredients:

  • black chick peas 1/4 kg (kalay chanay)
  • 1 medium sized tomato
  •  potatoes 2 small sized
  • 1 medium sized onion
  • 2 green chilies
  • coriander leaves 1/2 bowl
  • yogurt 1 bowl
  • tamarind pulp 1 bowl
  • chaat masala  1 teaspoon
  • salt to taste
  • lemon to garnish
  • sugar 1 tablespoon

Procedure:
  • Soak the black peas in water for two hours. Boil them.
  • Cut tomato, onions,chilies and coriander roughly.
  • Boil potatoes and cut them in cubes.
  • Mix the yogurt with the tamarind pulp. add to it chaat masala, salt and sugar and mix all well.
  • In a large bowl take the boiled black chick peas and boiled potatoes. To this add the cut vegetables and the yogurt mixture.Mix all well.
  • Garnish it with green chilies, lemon and coriander.
  • Serve cool and with additional imli (tamarind)  sauce:D
  • Serves 5-6.

Mocha Brownies :)

This is among the most awaited recipe which I'm finally posting on my blog:)



This was my first attempt of baking brownies:)


Ingredients:

  • 250gm unsalted butter
  • 250gm dark,unsweetened cooking chocolate, chopped (just see to it that the local variety of cooking chocolate already has sugar added, so before getting diabetes amend the sugar quantity accordingly:P)
  • 3/4 cup castor sugar (table sugar ground finely at home or better get confectioner's sugar available in market)
  • 1 Tablespoon dry instant coffee
  • 1 tablespoon hot water
  • 3 eggs
  • 1 1/2 cup plain flour

Procedure:
  • Take a shallow square cake pan and cover its base with butter paper and grease it.
  • Melt chocolate and butterin pan over low heat, stir until smooth.
  • Remove from heat and stir in sugar and combined coffee and water (mocha instant coffee dissolved in 1 tablespoon hot water)
  • Add into it eggs 1 at a time.
  • Stir in sifted flour with constant mixing. Take care to prevent formation of lumps of flour into the mixture.
  • Keep mixing with a wooden spatula till smooth mixture is formed.
  • Pour the mixture into prepared pan.
  • Preheat oven at 200 C for at least 45 minutes.
  • Bake in the brownies for about 35 minutes or until firm. (best way to check whether brownies cooked or not is to poke the brownie mixture with a knife. If the knife comes out without any mixture particles, it indicates proper cooking)
  • After being baked, cool the pan. Carefully detach the paper from the pan and dish out the brownie cake:D
  • Cut to squares and dust it with sifted icing sugar before serving:)

TIPS:
  • Do not try at higher temperatures you will burn the base of the brownies:P
  • Keep checking your pan after few minutes.
  • If its your first baking attempt do not panic (most importantly:P) if something goes out of the way as practice makes perfect brownies :)

Baked Pasta :)



Ingredients:
  • Pasta 1/2 pack
  • milk 1/2 liter
  • flour 4 Tablespoon (maida :P)
  • 4 cheese slices
  • salt 1/4 teaspoon
  • capsicum 2 medium sized cut in squares
  • red onion 1 medium sized cut in squares
  • Carrot 1 cut in small cubes
  • spring onion 2 roughly chopped
  • sugar 1/4 teaspoon
  • black pepper 1/2 teaspoon
Procedure:
  • Boil pasta and strain it. Pour on tap water to prevent from clinging.
  • Take non stick pan and saute 4 tablespoons of flour in it for 5 minutes.
  • Boil milk and add the cooked flour to milk slowly. As the milk thickens, add salt, black pepper and sugar in it.
  • Pour 2 tablespoons of oil and saute the vegetables in it. Now add  the cut vegetables i.e. capsicum, carrots, red onions and spring onions to the milk.Mix well.
  • add the boiled pasta and mix all the vegetables and pasta well.
  • Take an oven safe glass dish. Add the pasta and vegetables cooked in milk to the dish. Spread cheese over it.
  • Preheat oven at 150 C for half an hour.
  • Cook the pasta in oven for 2-12 minutes (just let the cheese melt and get mixed with the pasta and veges)
  • Take it from oven and serve with chili garlic sauce:)

The Pakistani style pasta:D

Tired of everyday chicken menu???? want to try pasta in mutton and Pakistani spice:D 
here it goes!


Ingredients:
1 medium sized onion chopped
garlic and ginger paste 3 table spoons
1 cup mutton mince (previously boiled)
1/2 packet pasta (previously boiled)
olive oil 2 to 3 tablespoons
salt to taste
red pepper 1/2 teaspoon
black pepper 1/2 teaspoon
mace 1piece (jawatri, A pakistani spice:P)
cinnamon 1 piece (daarcheni)
nutmeg 1 piece ( jaefal)
coriander powder 1/2 teaspoon
cardamom 1 piece 


Procedure:

  • Grind together mace, nutmeg, cardamom and cinnamom to turn it into powdered form.

  • warm oil in pan and add to it sliced onions and cook it till light brown.

  • add to it garlic and ginger paste and mix and cook well both.

  • now add the boiled mutton mince into the pan and cook it till the water dries. Cook till the aroma of ginger n garlic blends well with the onions and mutton mince.

  • after the water dries, the mutton and onions would look like this

  • add the ground spices, salt, red pepper & black pepper to the mutton mince and saute the ingredients well.

  •  Add the boiled pasta to the pan and mix all the ingredients well.

  • the pasta after being mixed and cooked well with the rest ingredients:)

  • The dish after being served and garnished:)

  • Garnish it with tomato and diamond shaped cut green chilies:) 
  • Enjoy with tomato sauce:)
