Mocha Brownies :)

This is among the most awaited recipe which I'm finally posting on my blog:)

This was my first attempt of baking brownies:)

Ingredients:

  • 250gm unsalted butter
  • 250gm dark, unsweetened cooking chocolate, chopped (just see to it that the local variety of cooking chocolate already has sugar added, so before getting diabetes amend the sugar quantity accordingly:P)
  • 3/4 cup castor sugar (table sugar ground finely at home or better get confectioner's sugar available in market)
  • 1 Tablespoon dry instant coffee
  • 1 tablespoon hot water
  • 3 eggs
  • 1 1/2 cup plain flour

Procedure:
  • Take a shallow square cake pan and cover its base with butter paper and grease it.
  • Melt chocolate and butterin pan over low heat, stir until smooth.
  • Remove from heat and stir in sugar and combined coffee and water (mocha instant coffee dissolved in 1 tablespoon hot water)
  • Add into it eggs 1 at a time.
  • Stir in sifted flour with constant mixing. Take care to prevent formation of lumps of flour into the mixture.
  • Keep mixing with a wooden spatula till smooth mixture is formed.
  • Pour the mixture into prepared pan.
  • Preheat oven at 200 C for at least 45 minutes.
  • Bake in the brownies for about 35 minutes or until firm. (best way to check whether brownies cooked or not is to poke the brownie mixture with a knife. If the knife comes out without any mixture particles, it indicates proper cooking)
  • After being baked, cool the pan. Carefully detach the paper from the pan and dish out the brownie cake:D
  • Cut to squares and dust it with sifted icing sugar before serving:)

TIPS:
  • Do not try at higher temperatures you will burn the base of the brownies:P
  • Keep checking your pan after few minutes.
  • If its your first baking attempt do not panic (most importantly:P) if something goes out of the way as practice makes perfect brownies :)

Enjoy home made Mocha brownies with tea:)

If your'e not in a mood to engulf large amounts of oil in fried chicken, this one is a must try:D

Okay the ingredients you would need for this recipe is:

yogurt 1/2 kg ( use it for marination plus mint chutni)
cooking oil 2 tablespoon
salt to taste (if the prepared masala doesn't have salt to your taste, although it won't be required)

FOR MINT CHUTNI:
1 green chili
few leaves of mint
Salt to taste
black pepper a pinch of it

PROCEDURE:
  • Take the chicken pieces and poke it with a fork so that the masala penetrates into it well.
  • Put the chicken pieces in bowl and add to it 2/3rd of the yogurt. Mix it well.
  • Now to this add the roast masala packet.
  • Pour in the vinegar, lemon juice and oil..Mix all the ingredients well and marinate the chicken for at 2 hours.
  • Preheat your oven at 200 C, 30-45 minutes before placing your chicken into it.
  • Grease the dish with cooking oil and and place the chicken pieces on it. Carefully pour the left over material to the chicken pieces so that it is completely covered.

The Ramazan cooking:)

Yesterday I planned to have some experimental fun with the Aftar Menu because I was so bored of the same Fruit Chaat and Dahi bhalaz daily:P
Trying your own innovative ideas with same old ingredients is really fun! You don't have to follow some one's recipe like dumb counting every grain of spice to make sure the meal doesn't gets ruined!
The food was spaghetti with chicken meat balls and vegetables and Chicken roast!

The Recipe was very easy and is as follows:D

INGREDIENTS:
1/4 pack of spaghetti
1 medium sized capsicum
few leaves of cabbage
1 medium sized red onion
1 medium sized carrot
salt to taste
black pepper 1/2 teaspoon
olive oil to saute fry the vegetables
ketchup 1 tablespoon
soy sauce 1 teaspoon
dried round red pepper 2-3 pcs
chicken meat balls (prepared and frozen available in the market)

PROCEDURE:

  • Fry the meat balls until golden brown and tender.
  • Cut cabbage, Capsicum, Onions and carrots in Julianne form (long style of cutting)
  • Saute the vegetables at low flame in olive oil and do its seasoning with salt and pepper.

  • Boil the spaghetti and rinse it with tap water to prevent it from clinging together.
  • Warm 1 tablespoon of olive oil and add to it the boiled spaghetti. Add salt and pepper to it. Now pour into it ketchup and soy sauce. Mix all very well and then add the dry red peppers to it.
  • Take your serving dish and place the spaghetti on it first and spread it evenly on it. Now place the vegetables neatly over the spahgetti and top it with the fried meat balls!
  • Serve it hot with Chilli Garlic sauce and ENJOY:)

Chicken roast coming next:)
